Menu for the Week of May 27th

Today symbolizes one of my favorite times of the year.  It’s the Friday before the Memorial Day weekend.  To me this weekend represents the beginning of Summer!  So in the spirit of BBQs and gatherings, I made sure to include a recipe for Monday, that’s great for grilling outside with an easy and delicious side dish I found on Joyful Heathy Eats.

Holiday weekends don’t mean you have to eat a bunch of junk, you can enjoy a healthy, tasty meal.  I’ll even bet that if you put the The BEST Grilled Chicken Recipe with Spice Rub and the Quinoa Tabbouleh Salad (featured image) up against the other dishes at a party you attend this weekend, everyone will wish they were eating what you are eating.  Go to the Weekly Menus page for the Menu and Shopping List for the Week of May 27th.
